I am a classically trained chef with 25 years of experience in professional kitchens. I began cooking as a hobby long before I went to school for it or cooked professionally. Cooking is my passion, and never fails to amaze me how much there always is to learn. This is not a medical book, or a book with a lot of scientific jargon. It is a professional chef written book of recipes and cooking tips. There are dozens of great books by experts on the science, and I will not tread in their areas of expertise.I had a friend who was a big Cross-Fit guy about 7 years ago, and he said “Ann, why don’t you start your own paleo business and sell pre-made paleo meals to cross-fitters in your area?” I thought it sounded like a great idea, so I did the first rational thing I could think of, and went online to see if someone was already doing paleo meals in my area, and the idea died as quickly as it got started. A well-known paleo meal delivery company was already established selling meals not 10 miles from my home. They had the advantage of being first, and had the facility already set up. I really did not think there was room for another company to get into business so nearby.As luck would have it, this same meal delivery company was advertising for a new chef about two months later. I immediately responded, interviewed that day and started the very next day. I was the sous chef, or second in command for the first 6 months which was helpful as I learned the ropes of Paleo cooking, what was involved in it, why people eat Paleo, and trying to wrap my head around the autoimmune protocol. It seemed so outrageously restrictive. Who would put themselves through such deprivation? I am a very lucky person in that I have no autoimmune diseases, although I have discovered that gluten does me no favors, and so it took me a little longer to get on board with the AIP and what it means for so many people.Once I took over as Executive Chef, I began to read books by the experts and leaders in the field, giving me a deeper understanding of gut health, autoimmune flare ups, inflammation and all sorts of things I never really knew about. The idea of food as medicine caught my imagination and the idea that through food I could help people to heal was very appealing.Once I learned that many suffering with autoimmune diseases desperately sought delicious AIP food and some of the flavors that they used to enjoy, that was it for me. I was not developing any more recipes that were not AIP compliant. It is way harder than straight Paleo, I won’t lie, but like anything, with practice you get better at it and certain key themes keep coming back. As you read the recipes in this book, I’m going to share all of my hard-earned knowledge, tips, tricks and reasoning behind the ingredients and cooking methods. It will be a brain dump, but hopefully an organized one that will be helpful. You will start to see patterns in the recipes and realize that you can apply these tricks and tips to the creation of your very own AIP recipes. Welcome to the slow food movement. You are going to eat a lot of great food which will also make you feel great. The nature of eating real food is that there will be no shortcuts or convenience. Everything is hand made from scratch. This is why I’m going to encourage you to make more than you need of most dishes, and freeze leftovers to use in the future. I’ll let you know when a dish will not freeze well and should be eaten right then.You are in good hands. I’ll help you on your AIP culinary journey. I’m keeping no secrets. I’ll give you every hard earned tip and tidbit that I have gleaned in my 6 years of AIP recipe development and creation.
