Lillet Rouge + Tonic

The late Dutchess of Windsor, Wallis Simpson, traveled with her Lillet bottle or, like the legend she was, sent a case ahead to wherever she was staying. While I’m fairly certain she drank her preferred apéritif neat or on the rocks with a twist, I also like to imagine that, when feeling extra saucy, she added tonic. This version uses Lillet Rouge, but take some liberty of your own and swap in the Blanc or Rosé varieties and sub out the grapefruit for lemon (with Blanc) or lime (with Rosé). It’s a veritable mix and match of sweet pre-dinner delights.

Recipe

Into a Collins glass filled with ice, pour the Lillet Rouge. Top with the tonic and add the grapefruit wedge.
