Sweet Potato and Sage Chips

Sage and sweet potatoes go together like turkey and Thanksgiving, with the same nostalgic flavor. Sage can crisp up when fried and add some herbaceous, savory notes to these sweet, crunchy snacks.

1. Prepare the sweet potatoes by slicing very thinly and evenly on a mandoline to 1/16 to ⅛ inch thick. You can leave the skin on.

2. Heat the oil to 360° to 375°F in a deep fryer or an enameled cast-iron Dutch oven over medium to medium-high heat. Use a deep-fry thermometer to measure the temperature if using a pot.

3. Working with one handful at a time, carefully lower slices of sweet potatoes and sage leaves into the fryer and stir to make sure they stay separated. They are ready as soon as the edges curl and brown, 30 to 45 seconds.

4. Do not add too many chips at a time.

5. Using a spider or slotted spoon, remove from the oil and drain on paper towels on a rack. Allow the oil to come back up to 360° to 375°F between batches

6. Season with salt while the chips and sage are still hot and enjoy when slightly cool

Serves 4 for snacking 1 pound sweet potatoes (2 medium, narrow potatoes are great for slicing into chips) 4 cups vegetable or other neutral oil for frying 5 fresh whole sage leaves Kosher salt
